  • Bromelain is also called pineapple enzyme, it's light yellow amorphous powder with slightly peculiar odor. The molecular weight is 33,000. Slightly soluble in water, insoluble in ethanol, acetone, chloroform and ether.

    It preferentially hydrolyzes the peptide chain on the carboxyl side of basic amino acids (such as arginine) or aromatic amino acids (such as phenylalanine, tyrosine), selectively hydrolyzes fibrin, and can decompose muscle fibers. Bromelain powder is using the best quality pineapple stems in processing, filtering enrichment using ultrafiltration method, freezing and drying.
